sabji
Here's a recipe you need to add to your collection!
I met a couple of friends this weekend to make Potato Sabji, a traditional Indian recipe that is easy to make, and soooo so satisfying. We added cumin, garam masala and a little salt. Really, any vegetable you have around will do. Next time I attempt this, (and thankfully I can, since I was sent home with a little garam masala as a gift) I think I'll add either lentils or chickpeas, or both. Enjoy!
Potato Sabji
6 potatoes
1 yellow onion
1 cup peas
1/4 tsp black mustard seeds
1/4 tsp crushed red pepper
1/4 tsp turmeric
In a little oil fry about 1/4 tp black mustard seeds, 1/4 tsp crushed red pepper, or one chopped green chili (small) and 1/4 tsp turmeric. Add chopped onion and fry. Add chopped potatoes, stir to coat and fry briefly. Add water (fill up half the pot) and cover the pot to cook about 20 minutes. Add peas and cook about 5 minutes longer. Serve with white long grain rice and/or naan.
